Ingredients

  • 1/4 cup almond flour (28g)
  • 1 egg
  • 1.5 tsp coconut oil (7g)
  • 10 g sugar free caramel syrup (e.g. Smuckers)
  • 10 g Sugar-free peanut butter powder (e.g. PB Fit)
  • 10 g  Truvia brown sugar blend (e.g. Truvia 75% fewer calories)
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla extract
  • 1 packet stevia or other sweeter of choice

Instructions

  • Melt the coconut oil in your mug (about 15 seconds in the microwave).
  • Add the egg and vanilla extract. Whisk until fully combined.
  • Stir in peanut butter powder, and brown sugar blend.
  • Add almond flour, baking powder, and sweetener. Mix until smooth with no dry spots.
  • Optional: Add a splash of almond milk if the batter feels too thick.
  • Microwave for 90-130 seconds, or until the top is just set. (Time varies by microwave power.)
  • Cool slightly, drizzle caramel syrup on top, and enjoy straight from the mug or drop it onto a dish!
